Chicken Waldorf Salad

• 1 – 12oz can of white meat chicken
• 1 Tbsp fat-free mayonnaise
• ¼ C. plain fat-free greek yogurt
• ¼ tsp powdered stevia (or 2 Tbsp splenda)
• 1 Tbsp dried cranberries
• ½ apple, diced
• ¼ C. thinly sliced celery
• ¼ C. fat-free shredded cheddar cheese


• Drain chicken and place in mixing bowl.
• Add mayonnaise, yogurt, and stevia.
• Mix until the chicken is broken up and evenly coated.
• Add cranberries, apple, cheese, and celery.
• Mix well. Enjoy! Very versatile!

Excellent alone or on top of lettuce in the acute phase or with a thin slice of toast, bagel or bread during wellness
